One thing I am not is a baker/dessert maker. I have very very few successful dessert recipes under my belt. So it should really not be a surprise to me or you that this next dessert recipe I attempted, from a dessert cookbook I have not really had success with, did not work out, in fact it epically failed!
The next recipe came from the infamous cookbook, Home Cooking Baking and Desserts, I used to make my friend Jamie a birthday raspberry shortcake. You can read about that epic fail here.
This time I attempted to make honey and nut nests. Sounds good…
To start with I cooked angel hair pasta till it was tender but still firm. The recipe said this should be 8-10 minutes. In reality the pasta was tender but still barely firm at 2 minutes.
I strained the pasta, returned it to the pot and stirred in butter. I let it cool slightly.
Then I divided up half of the pasta into tart tins. I topped the pasta with chopped pistachios, and then topped with the remaining pasta.
I cooked in a 350 degree oven until it was golden brown. The recipe said this would occur after 45 minutes. Mine was golden brown at 30 minutes, and if I would have left the pasta in the oven for 45 minutes it would have been crazy burnt.
As the pasta cooked I heated sugar, honey and water in a pan over medium heat. I stirred and brought it to simmer, reduce heat to low and let it simmer for 10 minutes. Then I added lemon juice and that simmer an additional 10 minutes.
I removed the pasta tins from the oven and carefully placed them on a plate. I drizzled them with the honey syrup…
and topped with additional pistachios.
All I can say is WHAT A MESS. Nest = Mess. Not only was the timing way off on this recipe but there was really no good way to eat these. I tried picking up with my hands, I tried with a knife and fork, both failed. And the flavor really wasn’t that good. So if you are looking for a cookbook on dessert, don’t buy this one!
