One of the fun events in Windsor Matt and I try to do each year is the Tweed Ride. It’s a bicycle ride where you are encouraged to ride vintage bicycles and wear vintage clothing. The ride itself goes around the city making stops at bars and restaurants along the way. The morning of the Tweed Ride I made breakfast for Matt and I from the next cookbook in line….
Easy Gourmet by Stephanie Le.
Stephanie Le is another food blogger. Her blog is called: I am a food blog. The reason I found her blog, which lead me to find her cookbook, was because she also has a blog where she made every one of David Chang’s recipes from his Momofuku cookbook. I have found that when I make David Chang’s recipes it’s quite entertaining, you can read about my last adventure here. And the one previous to that here.
Anyway I decided to order Stephanie’s cookbook because I liked the recipes she had featured on her blog. The recipe I had tagged in the book was for Spicy Shrimp Omelette.
To start with I marinated shrimp in chili garlic sauce, lime juice, sugar, fish sauce, green onion and cilantro for 15 minutes.
Then I heated some oil in a skillet over medium high heat. I added the shrimp and cooked for 1-2 minutes per side, until the shrimp was done.
I then removed the shrimp and wiped out the skillet.
I then whisked 2 eggs with chili garlic sauce and salt.
I headed up more oil in the skillet, this time over medium heat. Then I added the egg mixture.
Once the egg was mostly set I topped half of the egg with the shrimp and some green onion and cilantro.
I then folded over half of the egg, and let it cook another minute or two.
I removed the omelet from the skillet and topped it with more green onion and cilantro then served it with a lime wedge.
The Verdict: VERY tasty. And it was pretty fast and easy. It ended up being a yummy start to our Saturday! So far I am impressed Stephanie Le!
