More Breakfast, Baking This Time

Oh baking.  Not my thing but you know…part of the reason for my cookbook project is to cook new things and improve upon my cooking.  So I guess that includes baking.  And right off the heels of my last breakfast recipe, I whipped up another breakfast recipe.  This time from a Gordon Ramsey cookbook!

The recipe I had tagged was for Banana Oat Muffins.  Again the recipe was super simple so I really don’t think a formal recipe is needed.  I first preheated my oven to 350 F.  I lined 12 muffin tins with paper liners.  Then I mixed 1 1/3 cups of oats, 1 1/2 cups of all purpose flour, 1 1/2 tsp of baking powder, 1 tsp of baking soda, 1/4 tsp salt and 1/2 cup of brown sugar.

In a separate bowl I mashed 4 ripe bananas.

Then whisked in a beaten egg and 4 TB of melted butter.

I made a well into the dry mixture and poured the wet mixture into the well along with 1/2 cup of chopped walnuts.

I mixed until just combined.

And then scooped into the muffin papers.

The muffins went into the oven for 25 minutes and tada….

The Verdict:  I thought the muffins were good, but baked thing really aren’t mine or Matt’s things so after eating one I pawned the rest off to friends…as dessert, after a crazy dinner coming in an upcoming post. Stay Tuned!!
