The next cookbook up is one of my few Mexican cookbooks. It’s called Mexican Made Easy by Marcela Valladolid. The recipe tagged was for Scallop and Shrimp Cocktail. This recipe was pretty quick and easy so there aren’t many photos. We had it as a snack one night while watching Shameless.
To start off with I took scallops and put them in a pot of boiling water with salt for about 2 minutes when they were translucent.
I removed the scallops, cut them each into quarters and set them aside in the refrigerator to cool.
Next I took cilantro, Serrano chile, shallot (which was suppose to be red onion but dummy me forgot to buy red onion…it was on my list and everything!), lime juice, clamato juice, ketchup and hot sauce and I mixed them all together in a large bowl.
Last I gently stirred in the scallops and cooked shrimp.
We ate the cocktail with tortilla chips, but the recipe said saltines could also be used.
The Verdict: Very fast, very easy and pretty tasty. And I think the shallots were a fine substitute for the red onion…I may have even preferred the cocktail with shallots. I’m not sure if I will make it again, we don’t seem to eat a lot of cocktails like these…but maybe for a party it would be a great dish to bring?
