Lucky Peach is an awesome food magazine that I subscribe to. It is my favorite magazine actually. It contains fun articles about the restaurant business and fun interviews with some of my favorite chef’s. It’s super fun to read.
Recently Lucky Peach put out a cookbook and it was the first ever cookbook I preordered! 101 Easy Asian Recipes by Peter Meehan!
I had tagged the recipe for Gado Gado Dip. It was super easy to make. I put 1/2 tsp chili flakes, 1 clove of garlic, 1/2 cup of peanut butter, 3 TB of lime juice, 3 TB of brown sugar, 2 TB of fish sauce and 1 TB of soy sauce into my food processer. I processed until it was combined and creamy. Then I slowly added 1/4 of hot water.
I brought this dip to work and dipped hard boiled eggs, shrimp chips, and blanched green beans and bok choy into it.
Other suggested things to dip are firm tofu, carrots, broccoli, cauliflower and cabbage.
The Verdict: The dip was pretty good but I am really not sure when I would ever make it again. It had a loose consistency so it wouldn’t really lend itself to bringing as a dip to a party…unless perhaps you played around with adding less water? But it made a good work lunch, and it was nice to be not eating a sandwich!
