Breakfast Sandwich for Breakfast

I am finding while doing this project that I am making a lot of soups and a lot of breakfast sandwiches.  Well here’s another breakfast sandwich.  It comes from the cookbook The Truck Food Cookbook.

The recipe tagged was for breakfast sandwiches with broccoli rabe and provolone.  To start off with I blanched broccoli rabe (also know as rapini).  After boiling for 2 minutes I drained the water and put the rapini in ice cold water then drained again and let it sit on a paper towel to collect even more water.

Then I heated butter in a large skillet over medium high heat and added lightly beaten eggs to the pan.

Once the eggs were just about set I added the rapini and stirred.

It only had to cook another minute or so until the eggs were done.  Then I took a bun, put 2 pieces of provolone in it and topped with the egg rapini mixture.

The Verdict:  Another fast and easy recipe to make.  In fact it was so easy that I didn’t write up a formal recipe for this one.  If you want to make it you can follow the instructions in this blog post quite easily.  Tash came over for breakfast this morning (we were headed to see the last Hunger Game’s movie) and said the provolone cheese was the perfect cheese for the sandwich.
