I am on a breakfast bender I guess. Well there are probably worse things I could be on a bender for. The next recipe comes from another one of my new cookbooks, Gordon Ramsay’s Healthy Appetite.
I am fairly sure all readers know who Gordon Ramsay is but recently I have started to get into his cooking because he leads a very healthy lifestyle. This guy does marathons and iron mans and all kinds of crazy stuff like that. When I purchased this book I had tagged one of the very first recipes, melon and berry salad.
It was pretty easy and I didn’t really take any “in progress” pictures. I also didn’t write up a fancy recipe page since it was so easy. To make it I cut a cantaloupe and a honeydew melon into bite size cubes. I then mixed the melons lightly with 10 oz of mixed berries (I used blackberries and raspberries). I grated a lime and an orange over the fruit and then squeezed the juice of half the lime and half the orange over the fruit. I drizzled with honey and then sprinkled with shredded mint. I then mixed gently and served.
Verdict: Very easy and fast to make. And very tasty as well. I could see this as a good dish to bring to a party so it’s use extends past breakfast.
